Ingredients
- 4 thin slices of cucumber
- 4 1-inch strips of lime zest
- 1 tsp icing sugar
- 1 sliced strawberry
- 2 oz Australian Distilling Co. Fremantle Gin
- 0.5 oz fresh lime juice
- 1 dash Convict bitters
- Club soda
Method
- Combine the cucumber, half of the strawberry, lime zest, and sugar and muddle
- Fill a highball glass with ice, pour over the muddle fruit and add lime juice and gin
- Top with soda and add a dash of Convict bitters
- Garnish with slices of remaining half strawberry
